Fresh Spinach and Tarragon Salad

1 bunch spinach, rinsed and torn into bite-size pieces
2 hard boiled eggs, chopped
5 slices bacon, cooked until brown and crumbled
1/2 c. vegetable oil
2 Tbsp. red wine vinegar
1 tsp. white sugar
1/2 tsp. salt
1/2 tsp. dried tarragon
1/4 tsp. ground black pepper

Combine spinach, egg and bacon in bowl.  Whisk together oil, vinegar, sugar, salt, tarragon and pepper to make dressing.  Pour enough dressing over salad to coat.  Toss and serve immediately.
